Yummy!

Triple Chocolate Cookies


These were too good not to share. I had some at a friends house last night and I called her up this morning for the recipe. The kids enjoyed them and with a cup of coffee they are delish!

Triple Chocolate Cookies

2 cups flour

½ cup cocoa powder

2 t baking powder

¾ t salt

4 large eggs (I used two)

2 t vanilla

2 t instant coffee (didn’t use)

10 T unsalted butter, softened

1 ½ cups packed light brown sugar (only used 1 cup)

½ cup granulated sugar

16 ounces semisweet chocolate, melted and cooled (I used 1 cup melted choc chips)

2 cups semisweet chocolate chips (I used 1 cup)

Whisk together flour, cocoa, baking powder, and salt. In separate bowl whisk eggs, vanilla, coffee, until coffee is dissolved. Beat in mixer butter and sugars, add egg mixture until incorporated. Add melted chocolate. Then slowly mix in flour mixture until combined. Stir in chocolate chips. Let stand at room temp until fudge-like in consistency, about 30 mins. Bake 10-12 mins at 350.
